cheese making

Nothing complements a fine wine like gourmet cheese. We make our own. And if you’d like to learn how, we offer classes where you can master this art and make your own, from cheddar to gouda to mozzarella, and more..

the way you like it

There are many types of cheese and each one has its own unique texture, aroma, and flavor. They pair so well with fine wines, enhancing your taste experience. We’ll help you make your favorites or try something new and different.

process

All cheese is made from milk whether it’s cow’s milk, sheep’s milk, goat’s milk, or even buffalo milk, or even camel’s milk. Adding cultures to the allows it to ferment and adding rennet creates the curds that are processed, separated, drained, sectioned, and flipped. After dry salting or brining, the cheese is shaped and aged, some for several days, others for years.

take it home and enjoy

During our classes, you’ll learn how to master the steps in fine cheese making, and when you’ve created your own gourmet cheese, you’ll be able to take your creation home and enjoy it with family and friends.
